Parmesan-Crusted Salmon with St. Elmo Blackened Seasoning and Tartar Sauce

Ingredients (Serves 4)

  • 4 (6 oz) salmon fillets
  • 1 cup panko breadcrumbs
  • 1 cup grated Parmesan cheese
  • 2 Tbsp mayonnaise
  • 2 Tbsp St. Elmo Blackened Seasoning
  • St. Elmo Tartar Sauce, for serving

Instructions

  1. Prep the oven and pan: Preheat oven to 425°F. Line a baking sheet with parchment paper and lightly oil.
  2. Prepare the salmon: Pat fillets dry and rub each with mayonnaise.
  3. Make the crust: In a bowl, combine panko, Parmesan, and St. Elmo Blackened Seasoning.
  4. Crust the salmon: Press the mixture firmly onto each fillet.
  5. Bake: Place salmon crust-side up on the prepared sheet and bake for 15 minutes. Optional: broil 1–2 minutes for extra crispiness.
  6. Serve: Plate warm salmon and top with St. Elmo Tartar Sauce. Enjoy!
