These bite-sized shrimp sliders are perfect for entertaining. Theyāre a quarter the size of a traditional New Orleans poā boy, but still deliver all the crunch and bold flavor. The secret? A generous spread of St. Elmo Cocktail Sauce.
Ingredients
½ cup whole milk
2 large eggs
½ cup all-purpose flour
½ cup finely ground cornmeal
1 Tbsp St. Elmo Blackened Seasoning
Salt & pepper
1 lb shrimp, peeled and deveined, tails removed
Vegetable oil, for shallow frying
12 slider buns
Shredded iceberg lettuce

Whisk the milk and eggs together. In a separate bowl, combine flour, cornmeal, and Cajun seasoning; season with salt and pepper. Dip each shrimp into the milk mixture, then coat in the dry mixture.

Heat about 2 inches of oil in a skillet over medium heat. Fry shrimp until golden and crispy, about 2 minutes per side. Drain on paper towels.
