Creamy Spinach Dip

Ingredients
- ½ yellow onion, minced
- 2 tbsp. garlic, chopped
- 5 tbsp. cooking oil
- 3½ tbsp. all-purpose flour
- 2 cups chicken broth
- 2 cups half & half
- 6 tbsp. grated Parmesan cheese, divided
- 3 oz. sour cream
- 1 cup Monterey Jack cheese
- 1 lb. baby spinach, blanched and roughly chopped
- 2 tbsp. St. Elmo Creamy Horseradish
- ½ tsp. salt
- ½ tsp. coarse black pepper
Directions
- Heat the oil in a large pot over low heat. Add the onion and garlic and cook until softened.
- Stir in the flour and cook for 5 minutes, stirring frequently without browning.
- Gradually whisk in the chicken broth and simmer for 5 minutes.
- Add the half & half and simmer for 10 minutes. Stir in 4 tablespoons of Parmesan until smooth and thickened.
- Remove from heat and transfer to a mixing bowl. Stir in the sour cream, St. Elmo Creamy Horseradish, salt, pepper, and the remaining 2 tablespoons of Parmesan.
- Refrigerate for 1 hour.
- Fold in the chopped spinach and Monterey Jack cheese.
- Reheat in the microwave or on the stovetop until hot and bubbly. Garnish with additional Parmesan, if desired, and serve with tortilla chips, toasted baguette slices, crackers, or fresh vegetables.
