Creamy Spinach Dip

Ingredients

  • ½ yellow onion, minced
  • 2 tbsp. garlic, chopped
  • 5 tbsp. cooking oil
  • 3½ tbsp. all-purpose flour
  • 2 cups chicken broth
  • 2 cups half & half
  • 6 tbsp. grated Parmesan cheese, divided
  • 3 oz. sour cream
  • 1 cup Monterey Jack cheese
  • 1 lb. baby spinach, blanched and roughly chopped
  • 2 tbsp. St. Elmo Creamy Horseradish
  • ½ tsp. salt
  • ½ tsp. coarse black pepper

Directions

  1. Heat the oil in a large pot over low heat. Add the onion and garlic and cook until softened.
  2. Stir in the flour and cook for 5 minutes, stirring frequently without browning.
  3. Gradually whisk in the chicken broth and simmer for 5 minutes.
  4. Add the half & half and simmer for 10 minutes. Stir in 4 tablespoons of Parmesan until smooth and thickened.
  5. Remove from heat and transfer to a mixing bowl. Stir in the sour cream, St. Elmo Creamy Horseradish, salt, pepper, and the remaining 2 tablespoons of Parmesan.
  6. Refrigerate for 1 hour.
  7. Fold in the chopped spinach and Monterey Jack cheese.
  8. Reheat in the microwave or on the stovetop until hot and bubbly. Garnish with additional Parmesan, if desired, and serve with tortilla chips, toasted baguette slices, crackers, or fresh vegetables.
