Ingredients
- 2 lbs boneless, skinless chicken breasts
- 2 tbsp olive oil
- 2ā3 tbsp St. Elmo Blackened Seasoning
- 4 large flour tortillas
- 2 heads romaine lettuce, chopped
- 1 cup shredded Parmesan cheese
- Caesar dressing, to taste
- 1 cup croutons, lightly crushed
- ½ cup Caesar dressing
- 1 tsp St. Elmo Blackened Seasoning
Directions
- Preheat a Blackstone griddle to medium-high heat and lightly oil the surface.
- Coat the chicken with olive oil, season generously with St. Elmo Blackened Seasoning, and let rest for 15ā20 minutes.
- Cook the chicken for 5ā6 minutes per side, or until it reaches an internal temperature of 165°F. Let rest for 5 minutes, then slice thinly.
- Warm the tortillas on the griddle for 15ā20 seconds per side.
- In a large bowl, toss together the chopped romaine, Parmesan, Caesar dressing, crushed croutons, and sliced chicken.
- Divide the mixture among the tortillas, wrap tightly, and place seam-side down on the griddle. Cook for 1ā2 minutes per side until lightly golden and crisp.
- For the dipping sauce, stir together the Caesar dressing and St. Elmo Blackened Seasoning.
