Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2–3 tbsp St. Elmo Blackened Seasoning
  • 4 large flour tortillas
  • 2 heads romaine lettuce, chopped
  • 1 cup shredded Parmesan cheese
  • Caesar dressing, to taste
  • 1 cup croutons, lightly crushed
  • ½ cup Caesar dressing
  • 1 tsp St. Elmo Blackened Seasoning

Directions

  1. Preheat a Blackstone griddle to medium-high heat and lightly oil the surface.
  2. Coat the chicken with olive oil, season generously with St. Elmo Blackened Seasoning, and let rest for 15–20 minutes.
  3. Cook the chicken for 5–6 minutes per side, or until it reaches an internal temperature of 165°F. Let rest for 5 minutes, then slice thinly.
  4. Warm the tortillas on the griddle for 15–20 seconds per side.
  5. In a large bowl, toss together the chopped romaine, Parmesan, Caesar dressing, crushed croutons, and sliced chicken.
  6. Divide the mixture among the tortillas, wrap tightly, and place seam-side down on the griddle. Cook for 1–2 minutes per side until lightly golden and crisp.
  7. For the dipping sauce, stir together the Caesar dressing and St. Elmo Blackened Seasoning.
