INSTRUCTIONS
1. Preheat a broiler to high
2. Slice fresh salmon into 1-inch cubes
3. Drizzle with olive oil and season generously with St. Elmo Blackened Seasoning
4. Broil for 4 - 5 minutes
5. Serve with St. Elmo Remoulade
RECIPE:
2oz St. Elmo Barrel Aged Old Fashioned
2oz apple cider
2oz orange juice
1 tbsp honey (or to taste)
Garnish: Orange peel, star anise, cinnamon stick

1. Heat ingredients in a saucepan until almost bubbling. Do not boil.
2. Serve in a clear, glass mug and garnish with an orange peel, star anise and a cinnamon stick.

INGREDIENTS
4 lbs. very ripe tomatoes
4 tbsp. St. Elmo Coarse-Cut Horseradish
½ c. St. Elmo Cocktail Sauce
1 English cucumber, peeled
1 red bell pepper, core and seed
1 large shallot, chopped
2 garlic cloves, chopped
1 oz sherry or red wine vinegar
1 tbsp. salt
3oz extra-virgin olive oil
5 cherry tomatoes, quartered
Chives, chopped
Toasted bread, for serving
INSTRUCTIONS
1. Roughly chop tomatoes, cucumber red pepper, shallot and garlic cloves then place in a mixing bowl. Add sherry (or red wine vinegar) and salt then toss.
2. Let mixture sit for 30 minutes at room temperature.
3. Transfer tomato mixture to a blender. Add St. Elmo Cocktail Sauce, Coarse-Cut Horseradish and extra-virgin olive oil then blend on high until gazpacho becomes smooth in consistency.
4. Chill in refrigerator for 1 hour.
5. Serve chilled in soup bowl. Garnish with cherry tomatoes, chives, a drizzle of olive oil and toasted bread.
Eggnog Espresso Martini (yield 2)
INGREDIENTS
2oz full fat eggnog
2oz heavy whipping cream
4oz St. Elmo Espresso Martini
Cinnamon or nutmeg to garnish
RECIPE
1. Whisk eggnog and heavy cream together until it starts to thicken.
2. Add St. Elmo Espresso Martini to a shaker with ice.
3. Shake for 10 seconds and strain into a martini glass.
4. Top with cold foam and garnish with cinnamon, nutmeg or both.
Eggnog Espresso Martini Station (yield 8)
INGREDIENTS
1c of each full fat eggnog flavor (regular, pumpkin and vanilla spice)
3c heavy whipping cream
2c St. Elmo Cocktails Espresso Martini
Cinnamon or nutmeg to garnish
RECIPE
1. Whisk 1 cup of each eggnog flavor with 1 cup heavy cream until it starts to thicken. Separate and label each flavor.
2. Add St. Elmo Espresso Martini to a shaker with ice.
3. Shake for 10 seconds and strain into martini glasses.
4. Allow guests to top with cold foam and garnish with cinnamon, nutmeg or both.

1. Preheat oven to 350 degrees
2. Season chicken breasts with St. Elmo Blackened Seasoning then grill or roast. Once cooled, chop chicken
3. Cook bacon then chop
4. Slice rolls in half and assemble sliders: generously spared St. Elmo Creamy Horseradish on bottom buns, add chicken, bacon, cheese and chives. Brush top buns with melted butter.
5. Bake for 10 - 15 minutes or until cheese has melted. Serve with Creamy Horseradish for dipping, slice and enjoy!

1 lb pulled pork, cooked
1 package Pepper Jack cheese
1 bottle St. Elmo Root Beer Glaze
1 package Hawiian Rolls
INSTRUCTIONS
1. Preheat oven to 350 degrees
2. Mix 1 bottle of St. Elmo Root Beer Glaze with pulled pork
3. Slice rolls in half and assemble sliders: place pepper jack cheese to bottom buns, add pulled pork and top with another layer of cheese
4. Bake for 10 - 15 minutes or until cheese has melted, slice and enjoy!
PUMPKIN CREAM COLD FOAM INGREDIENTS
1 c. heavy cream
1/2 c sweetened condensed milk
3 tbsp pumpkin puree
1 tsp vanilla
2 tsp pumpkin pie spice

1. Whip all ingredients together in a bowl until thick
2. Store in fridge for up to 1 week
WAYS TO ENJOY
1. Add 2 tbsp Pumpkin Cream Cold Foam into shaker with ice, add 2oz St. Elmo Espresso Martini, shake and pour into a martini glass

3. Fill a highball glass with ice, add 2 oz cold brew, 2 oz St. Elmo Espresso Martini and top with Pumpkin Cream Cold Foam

INSTRUCTIONS
1. Preheat oven to 425 degrees
2. Coat both sides of the salmon patties with oil and St. Elmo Blackened Seasoning.
3. Bake for 8 – 10 minutes then flip. Cook for an additional 5 minutes or until cooked through.
4. On a plate, place bib lettuce under each salmon patty, squeeze lemon juice on top, garnish with a sprig of dill and serve with plenty of St. Elmo Remoulade.

1/2 red cabbage, thinly sliced

1. Slice tilapia or other firm white fish filets lengthwise, across the grain into 1" wide strips.
2. Lightly oil, then season generously with St. Elmo Blackened Seasoning.
3. Brown fish in a non-stick skillet over medium heat with 1-2 tbs of oil, 3-5 minutes, turning often. Set aside.
4. Red Cabbage Slaw - cut red cabbage thinly into slaw to yield 2 cups. Season with salt and pepper to taste. Drizzle with freshly squeezed lime.
